Ingredients:
- 2 Seasiders salmon portions
- 1 pouch Atkins & Potts White Wine, Smoked Garlic & Thyme Finishing Sauce available in seasider seafoods
- Fresh parsley, chopped
- Salad to serve
Our Method:
- Fry the salmon with a little oil, skin side down for a few minutes, then flip over and cook on the other side until cooked through. Remove and keep warm.
- Add the Atkins & Potts White Wine, Smoked Garlic & Thyme Finishing Sauce to the pan and scrape any bits off the bottom of the pan into the sauce.
- When the sauce is just simmering, pour over the salmon and top with the parsley.
- Serve with salad.
This is also delicious if you griddle or barbecue the salmon.
PRAWN PASTA SALAD WITH GARLIC & HERB DRESSING
Ingredients:
- 200g pasta
- 400g cooked prawns
- 2 medium tomatoes, sliced
- Atkins and Potts Garlic & Herb Dressing
- Salt and pepper
Our Method:
- Bring a large pan of salted water to the boil and add the pasta. Cook according to packet instructions then drain.
- Add the cooked prawns and tomatoes to the pasta with a little black pepper and mix well.
- Drizzle over a good serving of Atkins and Potts Herb & Garlic Dressing before serving.
- This is delicious warm or cold.
POACHED COD WITH WHITE SAUCE, PARSLEY & LEMON
Ingredients:
- 1 pouch Atkins & Potts White Sauce with Parsley & Lemon Zest
- 2 cod fillets
- Steamed seasonal vegetables to serve
Our Method:
- Pour the Atkins & Potts White Sauce with Parsley & Lemon into a wide based saucepan. Bring slowly to a gentle simmer.
- Place the cod fillets into the simmering sauce and cook for 5-10 minutes until the fish is cooked through.
- Remove the cod from the sauce and put onto a plate with the vegetables on the side.
- Reduce the sauce to taste, then pour over the fish and vegetable
SALMON WITH DILL HOLLANDAISE
Ingredients:
- 2 salmon fillets
- 1/2 jar Atkins & Potts Hollandaise Sauce
- 3-4 sprigs fresh dill, chopped
- Salad to serve
Our Method:
- Fry or grill the salmon until cooked through.
- Gently warm the Atkins & Potts Hollandaise Sauce in a small pan and stir through the chopped dill.
- Serve the salmon with the salad and pour the warmed Hollandaise Sauce over the top.
